Smoked Salmon Nori Wrap

Makes: 1-2 servings

Making sushi from scratch can be a tedious and daunting task. Make it easier on yourself and assemble a quick wrap instead! Add in all of your favorite sushi fixings, fold it up and enjoy!

 

Ingredients: 

  • 1-2 nori sheets
  • 2 tbsp vegan mayo
  • 1 tbsp Sriracha
  • 1 cup sticky rice
  • 1-2 slices smoked salmon
  • Half an avocado, thinly sliced
  • 4-8 slices english cucumber
  • Handful of microgreens

  

 

Instructions:

  1. Cook the sticky rice according to package instructions then let it cool.
  2. Place the nori on a cutting board. With a pair of scissors, cut the nori sheets from the bottom up to the center only.
  3. Prepare the Sriracha mayo: Mix together the vegan mayo and Sriracha until well combined.
  4. For assembly, you’ll add each ingredient to 1 quadrant of the nori wrap until the 4 quadrants are covered: Add rice to one section, the Sriracha mayo and  cucumber slices to another, the avocado to the next and the smoked salmon and microgreens in the final section.
  5. To fold, lift one of the bottom pieces up where the cut is and and gently fold it across to another section. Then fold that section again until you’ve made one complete square. You can eat as is, or cut it in half. Add some extra Sriracha mayo on top and enjoy!
