Slow Cooker Brunswick Stew

Cook Time: 8 hours or overnight

Makes: 8-10 servings

This classic southern stew is perfect for a chilly day. It’s bold, rich, comforting and meaty! Add all of your ingredients to your crockpot and let it cook overnight for a delicious hearty meal you can share with your family.

 

Ingredients:

  • 1 [14.5 oz] can diced tomatoes
  • 1 [8 oz] can tomato sauce
  • 1½ cups BBQ Sauce
  • 3 tbsp worcestershire sauce
  • 1 tbsp brown sugar
  • 1-2 tbsp hot sauce
  • ½ tsp liquid smoke
  • 2 to 3 cups chicken broth
  • 1 large sweet onion, chopped
  • 4 celery stalks, chopped
  • 4-6 garlic cloves, minced
  • 1½ cups frozen corn
  • 1½ cups frozen lima beans
  • ¼ tsp cayenne pepper
  • ½ tsp salt and pepper
  • 1 bay leaf
  • 2 tbsp butter
  • 2 large chicken breasts, or 1 whole rotisserie chicken, shredded
  • 2 lbs pork shoulder

 

Garnish:

 

 

Instructions:

  1. Add all of the ingredients to a large crockpot.
  2. Cook for 8 hours on high or overnight on low. 
  3. Once the pork and chicken are fork-tender, remove the bone and bay leaf and shred the pork and chicken. 
  4. Turn the crockpot to warm and serve!
