Fig & Toasted Pine Nut Salad with Vanilla-Balsamic Vinaigrette

Makes: 4-6 servings

This fresh fig salad with toasted pine nuts, mixed lettuce, microgreens and a flavorful vanilla-balsamic vinaigrette is perfect for early autumn gatherings. It’s beautiful, healthy and all around delicious! 

 

 Ingredients:

  • 6-8 figs, stems removed, quartered
  • ½ cup pine nuts, toasted 
  • 5 oz mixed lettuce, including arugula
  • ¼ cup sweet onion, thinly sliced
  • 1 cup microgreens
  • 10 basil leaves, lightly chopped

 

Vanilla-Balsamic Vinaigrette:

  • ¼ tsp vanilla extract
  • 2 ½ tbsp balsamic vinegar
  • 1-2 tsp maple syrup
  • 3 tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

 

 

Instructions:

  1. In a small skillet over medium heat, add the pine nuts and toast for 5-6 minutes, stirring occasionally. Let cool when ready.
  2. Prepare the vinaigrette: Add all dressing ingredients together and mix to combine. Set aside.
  3. Combine your pine nuts, figs, mixed lettuce, onion, microgreens and basil into a large bowl. Drizzle the vinaigrette over the top, mix to combine and enjoy!
